Simple & delicious summer salad.

Delicious Mediterranean-style summer salad with tomatoes, cucumbers, lemon juice, extra-virgin olive oil, and herbs.
Bring a medium pot of salted water to boil. Once boiling, add in 1 cup of orzo and cook for 9-10 minutes. After the orzo is cooked, run the orzo under cold water until cool.
While orzo is boiling, slice 1 1/2 cups of tomatoes in half and dice 2 cups of cucumber into 1/2-inch pieces.
In a small bowl or measuring cup, add 1/3 cup of extra virgin olive oil, 1/3 cup of lemon juice, 1 teaspoon of garlic powder, 1 teaspoon of oregano leaves, salt and pepper to taste and stir until combined.
Add cooled, drained orzo to a large bowl with tomatoes, cucumber and 1/2 cup of feta cheese, stirring until combined. Pour dressing over the salad and toss everything together until well coated. Cover and refrigerate until ready to serve. Enjoy!
